The State Committee for Standardization, Metrology and Patents of Azerbaijan held an analysis of samples taken during inspection in the Serham bakery, located in the Sabunchi district of Baku, the State Committee said.

Bread manufactured in the bakery from the highest quality flour for all indicators meets regulatory requirements.

All the shortcomings related with the use of raw materials in the bakery have been eliminated.

Earlier, during inspection the Committee revealed that the enterprise does not comply with rules of storage raw material (flour, salt ).

In addition, the committee found 30 bags (50 kilograms each) of flour and 43 bags of salt of unknown origin. The laboratory, which was used for the study of bread produced in the bakery, did not meet the requirements. As a result, it was revealed that the examination of bread was not conducted on an ongoing basis, respectively, there was no guarantee of bread quality.

Departure from the requirements of the normative document (State standard 28808-90) was revealed in the production process: acetic acid, which is not indicated in the normative documents, was used to increase the acidity of the bread and prevention of fungal disease.
