First saffron harvested in Uzbekistan

The first harvest was collected from the saffron plantations in the Kashkadarya region of Uzbekistan, Uzbek media reported.

The plantation was created in late August 2017. The harvesting campaign began in mid-October. In the early days, the farmers harvested 3,000-4,000 flowers, while then the figure rose to 7,000-8,000.

The harvested crop is immediately processed. The red stigma is carefully separated and sent for drying.

Saffron is by far, the most expensive food on Earth, costing $5,000 per pound? This flower is native to Central Asia and its important part is actually the stigmas. Large quantities of these flowers are required to be harvested in order to yield a viable supply of saffron threads, since each flower only has three stigmas (it takes 50,000- 75,000 flowers to produce one pound of dried saffron threads), making the harvesting an extremely labor intensive and time consuming process.

Today, saffron is still undeniably considered a culinary treasure and used in cooking, cosmetics, staining, medicines (believed to be the cure for almost 100 diseases and illnesses in the Middle East and Asia), and is also used to create signature perfumes thanks to its soft and intimate odor profile.
