Managing Director of Agricultural Services Specialized Holding Company Abbas Rajaei said the country’s sturgeon farms have so far produced 5 tons of caviar.
“More than 100 sturgeon farms are active in 19 provinces,” Rajaei said on Wednesday, IRIB news agency reported on October 3. "Nearly 5 tons of caviar have been so far produced in the farms."
Last year, 850 tons of sturgeons were fished for the purpose of production and later their hutchlings were released to the Caspian Sea, Rajaei said.
Once among Iran's most famous exports, the industry nearly collapsed due to trade restrictions and an international clampdown on sturgeon fishing from the Caspian Sea.
Now, dozens of Iranian producers are raising sturgeons legally in fish farms.
